Banana Bread
The next time you discover a banana that has been left just that little bit too long in the fruit bowl and it is just too ripe to take to work for lunch, pop it in the freezer. Do not throw it away! When you have about 3-4 bananas you can defrost them to make banana bread and ripe bananas also work best.
1 3/4 cups self raising flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
2 eggs
1/4 cup milk
75g melted butter
1 cup mashed banana
Pre heat oven to 180°C. Line a 22cm loaf tin with baking paper and set aside. Sift all dry ingredients into a bowl. In another bowl beat the eggs and then stir in the milk butter and banana. Quickly mix the wet ingredients into the dry ingredients by stirring until just combined. Spoon into the tin. Bake at 180°C for 45 minutes. Leave in the tin for 10 minutes before turning out onto a wire rack.
Serve warm with lots of butter.
